Ingredients

( you will need a large tray, a knife, foil and a cutting board for this recipe)

WHAT YOU WILL NEED:

  • Fajita Seasoning ( 1TBS-2TBS – enough to lightly top cover all potatoes )
  • 1 TBS Garlic Pepper (optional)
  • (Red Pepper Flakes if you want more spice)
  • Olive oil ( enough lightly line bottom of tray )
  • Pinches of Sea Salt (optional)
  • 1 Sweet Potato ( fits in the open palm of your hand.)

Instructions

  1. Start washing your Sweet Potato.
  2. Grab Knife and chopping board and slice Potato into fries shapes. (you may skin your potato if you want to and cut off the ends)
  3. Preheat oven to Gas mark 5 (375F)
  4. Prepare a flat wide tray, line with foil. (if you do not have foil then just use a clean tray)
  5. Line that foil with Olive oil to prevent the potatoes from sticking to the bottom of the tray. (a little can go a long way so do not put too much)
  6. Place your chips onto the oiled tray skins facing upward.
  7. Drizzle a small amount of olive oil on top of potatoes. (optional)
  8. Sprinkle on all seasonings, Fajita and Garlic pepper.
  9. Place in oven, near the middle lower part of your oven, set your timer for 20 minutes.
  10. After 20 mins flip the fries onto the over side to cook evenly.
  11. Place back in oven and cook for another 20-30minutes, depending on your oven.
  12. After 20-30 minutes check, with a fork, if all the potatoes are soft inside, if not place back in oven for another 5-10 minutes.
  13. Now your food is ready sprinkle on top some salt (optional) and serve.
  14. Enjoy maybe with a side salad (like pictured) or maybe even a Bean Burger.

Notes

You can make this same recipe with white potatoes too for a different flavour. Also everyones oven cooks things a little differently so make sure to check on these regularly while cooking, i don’t want you to have burnt or undercooked potatoes.

Hi Hi Hi everyone!

Today I have for you the long awaited Cake hunt ( sugar free and vegan of course ).

I promised a while back that I would test out and investigate some locations for sugar free cake for you all to go out and try – and here we are! The first part in many to come..

To be honest, I thought we would fall short and not be able to find anywhere to get this elusive Sugar free, vegan cake, but lucky us – there are actually more places than I think any of us ever realised..

All it took was for me to grab a friend, and do a little google search and now here we are 😛

All of the places I visited were refined sugar free, so if you have just cut out refined sugars there is plenty options for you in the London area.

Top tips:

-Take lots of pix

(f or evidence to show unbelieving friends, and convince them to join your sugar free side hehe )

-Check all ingredients properly, and ask the waiters

( don’t get over excited like me and miss some key information )

Vegan Lentil Shepherd’s pie Recipe | SKY CHRISTINA

It has been a while since I posted up a recipe for you all.

Since posting the video above , this Shepherd’s pie has been highly requested so here it is:

(I know the video doesn’t match the recipe down below but I forgot to bring the recipe with me, so I tried to quickly write it down by memory haha but trust me this one here is more flavourful and better haha)

(also if you are a total beginner at cooking, I have done my best to make the instructions as detailed as possible, but just know this might take you a little longer than an hour and 10minutes to make.)

VEGAN LENTIL SHEPHERD’S PIE

Warm and hearty, Vegan Shepherd’s Pie with lots of veggies and a mix of white and sweet potatoes for topping. You will love this Plant based version.

COOK TIME:   30 minutes
TOTAL TIME:  1 hour 10 minutes (beginners: 1 hour 30 minutes)

Cuisine:           Vegan, Plant based, No added sugars

Ingredients

( you will need a large casserole dish, measuring cups, foil and pots for this recipe)

TOPPINGS

  • 0.75LB White potatoes ( I use Maris pipers)
  • 0.75LB Sweet potatoes
  • 1/3 cup unsweetened almond milk (plant milk)
  • Pinches of Sea Salt (optional)
  • Pinches of Thyme (optional)

FILLING

  • 3/4 cup Lentils. (can mix red/ green)
  • 1 1/2 Tbsp Coconut oil
  • 1/2 cup chopped Carrots
  • 1/2 chopped Red Onion
  • 1 tbsp Garlic powder
  • 1 cup chopped Spinach
  • 2 cup sliced Mushrooms
  • 1/4 tsp Thyme
  • 2 tbsp Whole flour
  • 1-2 cups Veggie broth
  • 1/2 cup Sweetcorn
  • 1/2 cup Peas
  • 1 tsp All purpose seasoning ( add more of less depending on what you like)
  • 1 tsp Sea salt ( add more of less depending on what you like)

Instructions

  1. Start with boiling all your potatoes in a Large pot, to do this slice all potatoes in half and place in pot, fill with cold water up till it is just covering the potatoes. Cook on high heat until starts to bubble and boil, turn down to a medium/ low heat and boil until soft (roughly for 15 -20 minutes).
  2. Place Lentils in a pot with 2 1/2 cups of water and boil for 15-20 minutes.
  3. Preheat over to Gas mark 5 (375F)
  4. While everything is boiling take this time to chop up your vegetables if you haven’t already. Then get another large pot and heat the Coconut oil up on a medium heat, add the carrots, onion, garlic, spinach, mushrooms, all purpose seasoning, sea salt and thyme and simmer till vegetables are soft.
  5. Sprinkle 1 tbsp of flour onto your vegetables and mix, cook this for about a minute and add the second spoon, mix and cook for another minute.
  6. Slowly mix in your Veggie broth to this to make a slightly gravy consistency. When your gravy is made add peas, sweetcorn and cooked lentils. Simmer this for another 5 minutes. (make sure the mixture is not dry, add a little more water if so)
  7. Grab your casserole dish and pour in the Veggie gravy mixture.
  8. Grab your large pot of boiled potatoes and pour out excess water. Add Unsweetened Almond milk and mash together.
  9. Once mash is free of lumps (unless you like your mash lumpy..) spread evenly onto your Veggie gravy mixture in the casserole dish. Cover with foil and place into the middle shelf of your oven. Bake for 25 minutes. Once 25 minutes is up, safely remove foil and place casserole dish back in oven on the top shelf for 5-8minutes.(until mash has slightly browned)
  10. Now your food is ready sprinkle on top salt and Thyme (optional) and serve.

Notes

You can store this for up to around 3 days and reheat with a little water, so it doesn’t dry out.

So it has been a few months since I have quit sugar, and I feel like I have tried and tested so many things to get me through this tough period.

I realised that I have so many tips / tricks, that I use daily, to help STOP MY SUGAR CRAVINGS and thought why not share it with all of you.

Being Sugar-free (Update)

So, I wanted to do a quick update on my sugar-free journey because I realise with recent events, that I have fallen off the bandwagon and haven’t explained anything to you, my sugar-free friends.

 

Going back to eating sugar has definitely resulted in my facial skin going back to looking bad and spotty, and the fat I lost during the challenge on my back and abdomen is slowly returning.

I really could go into a million excuses as to why and how but thats exactly what they are – just excuses.

So basically I did a month of being sugar free and it was amazing! I did it, it was easy and the results physically and mentally were amazing.

and heres me explaining why I done it :

This was only about 3months ago

and previous to that I did it for 90days.

But just like when I did it for 90 days –

I fell off the bandwagon and started eating sugar again.

It’s become increasingly hard to do, when outside of the challenge and behind closed doors, I can secretly fulfil cravings whenever I please. Where as when I am in the spotlight, I feel the stronger need to keep up the sugar -free life. I am in a constant battle with myself to stop eating sugar and it is extremely stressful.

I am currently working on a dream wall and a part of the dream wall, I am going to add a section all about the reasons why I am sugar-free so I can get up and read it every day and rewire my mind deeper so I can let go of these poisonous products. I thought that I could do this as easily as I became vegan…. but I have come to realise my relationship with sugar, is far deeply rooted then it was for me and animal products.

I wasn’t really a big fan of dairy or meat so going vegan, cold turkey, was easy to do, plus I hadn’t really eaten red meat since I was about 12 years old.

Sugar on the other hand is something I have eaten at high doses on a daily basis since I was born. As a teenager most of my meals were bags of chocolates or sweets, and my diet was never really monitored in my teenage years, eating chocolate and sweets was more encouraged.

The only solution I see here is to really jump into my self and understand my connection with sugar.

My friend, in one of her videos put it quite right :

It is true – I eat a lot of things my mind has a deep set memory toward and connection to – my mind knows – this food is amazing and the second I see it, I get triggered.

It also doesn’t help the I live with my family and I look in the fridge or kitchen and there is snacks, bread, sugar everywhere.

I am going to take time to develop my relationship with fruits and vegetables and diminish my relationship with sugar.

I might even go as far as getting my own mini fridge so I can live with just looking at my own food for a while.

This is definitely something I am set on conquering and making a normal thing in my life just like being Vegan. I am accepting the fact that it may take some time for this to be normal for me, that there may be many ups and downs (lots of me falling off the bandwagon – but picking myself up quicker each time – without pressuring myself too hard) and that it will not be easy.

So I am starting my sugar-free journey up .. right now! 😛
